Lasagna Soup is a delicious twist on the classic lasagna, combining hearty flavors in a comforting soup that’s easy to prepare.

Ingredients

  • 1 pound ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 8 oz lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 teaspoons dried Italian herbs
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. In a large pot, brown the ground beef with the chopped onion and minced garlic until the meat is cooked through. Drain any excess fat.
  2. Stir in the crushed tomatoes, broth, and Italian herbs. Bring the mixture to a boil.
  3. Add the broken lasagna noodles to the pot. Cook for about 10-12 minutes until the noodles are al dente.
  4. Reduce the heat and mix in the ricotta cheese and half of the mozzarella cheese, stirring until creamy.
  5. Season with salt and pepper to taste. Serve hot, garnished with the remaining mozzarella and fresh basil.

Notes

For an extra touch, sprinkle some extra mozzarella cheese and fresh basil on top before serving. Pair it with garlic bread or a salad for a complete meal.
