  • 6 large eggs
  • 1 cup cooked and crumbled breakfast sausage
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup diced bell peppers
  • 1 cup diced potatoes or hash browns
  • Salt and pepper to taste
  • Optional: salsa or hot sauce

Instructions

  1. Cook the diced potatoes in a large skillet until tender. Add the bell peppers and sausage, cooking until heated through.
  2. Whisk together the eggs with salt and pepper in a bowl, then pour them into the skillet. Scramble the mixture until the eggs are fully cooked.
  3. Divide the mixture evenly among the tortillas, adding cheese to each. Roll the tortillas tightly, folding in the sides as you go.
  4. Place each burrito on a baking sheet and freeze until solid.
  5. Transfer the frozen burritos to a plastic freezer bag for long-term storage.
