Easy and flavorful chicken tacos made in a crockpot, perfect for busy weeknights.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1 cup chicken broth
  • 1 can diced tomatoes with green chilies
  • Taco shells
  • Shredded lettuce
  • Diced tomatoes
  • Shredded cheese
  • Sour cream

Instructions

  1. Place chicken breasts in the crockpot.
  2. Sprinkle taco seasoning over the chicken.
  3. Pour chicken broth and diced tomatoes on top.
  4. Cover and cook on low for 360 minutes or high for 240 minutes until chicken is cooked through.
  5. Shred the chicken with two forks and stir well.
  6. Serve in taco shells with toppings of your choice.

Notes

For added flavor, marinate the chicken in the seasoning and broth overnight. Feel free to add black beans or corn for extra texture.
