A comforting classic that warms both the body and soul, perfect for chilly days or when you’re not feeling your best.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 cup egg noodles
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté until tender, about 5-7 minutes.
  2. Stir in the garlic and cook for an additional minute.
  3. Pour in the chicken broth and add the shredded chicken, thyme, bay leaf, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 15 minutes.
  5. Add the egg noodles and cook until tender, about 7-10 minutes.
  6. Remove the bay leaf and adjust seasoning if necessary.
  7. Serve hot, garnished with fresh parsley.

Notes

Use homemade chicken broth for more flavor. Add a splash of lemon juice for richness and feel free to add more vegetables.
