Delicious and customizable zucchini boats filled with marinara, cheese, and your favorite toppings.

Ingredients

  • 2 medium zucchini
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sliced pepperoni
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the zucchini in half lengthwise and scoop out the center to create boats.
  3. Place the zucchini halves on a baking sheet, cut side up, and lightly drizzle with olive oil.
  4. Spread marinara sauce inside each zucchini boat.
  5. Sprinkle with mozzarella cheese, followed by pepperoni, Parmesan cheese, and Italian seasoning.
  6. Season with salt and pepper to taste.
  7. Bake in the preheated oven for 20-25 minutes, until the zucchini is tender and the cheese is bubbly and golden.
  8. Allow to cool slightly before serving.

Notes

Great to serve with a fresh side salad or garlic bread. Store leftovers in an airtight container for 3-4 days.
