A vibrant and flavorful zucchini noodle stir fry packed with fresh vegetables and a touch of sesame oil.

  • 1 bell pepper
  • 1 carrot
  • 1 cup snap peas
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions

  1. Spiralize the zucchini using a spiralizer to create beautiful zucchini noodles that will serve as the delightful base of your stir fry.
  2. Heat the olive oil in a large skillet over medium heat until it shimmers, preparing it for the explosion of flavors to come.
  3. Sauté the minced garlic in the skillet for about 30 seconds until fragrant.
  4. Stir-fry the bell pepper, carrot, and snap peas for about 3-4 minutes, keeping the veggies crisp.
  5. Combine the zucchini noodles with the vegetables and pour the soy sauce over them. Toss gently to combine.
  6. Drizzle sesame oil and season with salt and pepper to taste.
