A light and refreshing summer dish featuring zucchini noodles and shrimp in a garlic-lemon sauce.

Ingredients

  • 2 medium zucchinis
  • 1 pound shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes
  • 1/2 cup chicken broth
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish

Instructions

  1. Spiralize the zucchinis to create curly noodles and set aside.
  2. Heat the olive oil in a large skillet over medium heat until gleaming.
  3. Add the minced garlic and red pepper flakes to the pan, letting them sizzle for about a minute.
  4. Cook the shrimp until they turn pink, about 3-4 minutes.
  5. Pour in the chicken broth and lemon juice, bringing it to a gentle simmer.
  6. Toss the zucchini noodles into the skillet and cook for another 2-3 minutes.
  7. Season the dish with salt and pepper to taste.
  8. Plate the dish, garnishing with freshly chopped parsley.

Notes

For extra flavor, consider adding cherry tomatoes or swapping shrimp for scallops.
