Crispy and delicious zucchini corn fritters, perfect for breakfast, snacks, or as a side dish.

Ingredients

  • 2 medium zucchinis, grated
  • 1 cup corn kernels (fresh or frozen)
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Combine zucchini and corn in a large bowl.
  2. Remove excess moisture by squeezing zucchini in a towel.
  3. Mix in flour, Parmesan cheese, eggs, garlic powder, onion powder, salt, and pepper until combined.
  4. Heat oil in a skillet over medium heat.
  5. Form the fritters by dropping spoonfuls of the mixture into the skillet.
  6. Cook for 3-4 minutes on each side until golden brown.
  7. Drain on paper towels and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet until crispy.
