This moist and sweet zucchini bread is a perfect way to enjoy summer zucchinis, making it an ideal breakfast or snack option.

  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix together the grated zucchini, sugar, and oil in a large bowl.
  3. Add the eggs and vanilla extract, mixing until combined.
  4. Combine the flour, baking soda, baking powder, salt, cinnamon, and nutmeg in another bowl.
  5. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  6. Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow to cool before slicing.
