A warm, moist zucchini bread filled with love and nostalgia, perfect for breakfast or a sweet afternoon snack.

Ingredients

  • 2 cups grated zucchini
  • 1 cup sugar
  • 2 eggs
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. Combine the grated zucchini, sugar, eggs, vegetable oil, and vanilla extract in a bowl.
  3. Whisk together the flour, baking soda, baking powder, salt, and ground cinnamon in another bowl.
  4. Merge the dry ingredients with the wet ingredients until just combined.
  5. Pour the batter into the prepared loaf pan.
  6. Bake for about 50-60 minutes, or until a toothpick inserted comes out clean.
  7. Allow the bread to cool in the pan for a few minutes before transferring it to a wire rack.

Notes

Squeeze out excess moisture from grated zucchini for optimal texture. For an extra flavor boost, add nuts or chocolate chips.
