A refreshing salad combining creamy avocados, vibrant cherry tomatoes, crisp cucumbers, and briny olives, perfect for summer picnics or casual dinners.

Ingredients

  • 2 ripe avocados
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 0.5 red onion
  • 0.5 cup Kalamata olives
  • 0.5 cup feta cheese
  • 1 bunch fresh parsley
  • 0.25 cup extra-virgin olive oil
  • 1 lemon juice
  • 2 garlic cloves
  • Salt & black pepper
  • 0.25 cup toasted pine nuts

Instructions

  1. Prepare your fresh ingredients by slicing avocados and placing them in a mixing bowl.
  2. Chop the cherry tomatoes and add them to the bowl.
  3. Dice the cucumber and toss it into the mix.
  4. Slice the red onion and add it to the bowl.
  5. Add the Kalamata olives.
  6. Crumble the feta cheese and mix it in (or add cubed tofu for vegan option).
  7. Chop the fresh parsley and incorporate it into the salad.
  8. Whisk together olive oil, lemon juice, minced garlic, salt, and pepper in a small bowl.
  9. Combine the dressing with the salad mixture and toss gently.
  10. Garnish with toasted pine nuts.

Notes

For best flavor, add avocados just before serving. Leftovers should be consumed within 1 day to avoid browning.
