  • 3 to 4 ripe bananas
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mash the ripe bananas until smooth.
  3. Stir in the melted butter.
  4. Add sugar and mix well.
  5. Beat in the eggs, one at a time, followed by the vanilla extract.
  6. Whisk together flour, baking soda, salt, cinnamon, and nutmeg in another bowl.
  7. Fold the dry ingredients into the wet mixture until just combined.
  8. Fold in the chopped nuts if using.
  9. Pour the batter into the prepared loaf pan.
  10. Bake for 55 to 65 minutes or until a toothpick inserted comes out clean.

Use ripe bananas for optimal sweetness and avoid overmixing to keep the bread tender.
