Delightful White Chicken Enchiladas filled with tender chicken, creamy cheese, and zesty green enchilada sauce, perfect for any occasion.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup sour cream
  • 1 cup shredded cheese (such as Monterey Jack or cheddar)
  • 1 can green enchilada sauce
  • 8 small flour tortillas
  • 1/2 cup diced onions
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the onions in olive oil over medium heat until translucent, about 3-4 minutes.
  3. Combine the shredded chicken, sour cream, half of the cheese, and sautéed onions in a mixing bowl; season with salt and pepper.
  4. Fill each tortilla with the chicken mixture and roll them up, seam side down in a greased baking dish.
  5. Pour the green enchilada sauce over the rolled tortillas and sprinkle with remaining cheese.
  6. Bake for 20-25 minutes until bubbly and cheese is melted.
  7. Serve warm and enjoy!

Notes
