A comforting bowl of creamy white chicken chili, perfect for chilly nights or any day that needs a touch of warmth.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 can (4 oz) green chilies, diced
  • 1 cup chicken broth
  • 8 oz cream cheese
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Cornbread or tortilla chips for serving

Instructions

  1. Sauté the diced onion and minced garlic over medium heat until soft.
  2. Add the shredded chicken, white beans, green chilies, chicken broth, cumin, paprika, salt, and pepper. Stir well to combine.
  3. Bring the mixture to a simmer and cook for about 10 minutes.
  4. Reduce the heat to low and stir in the cream cheese until melted and the chili is creamy.
  5. Serve hot with warm cornbread or tortilla chips.

Notes

For added spice, top with sliced jalapeños, chopped cilantro, or cheese. This chili stores well in the fridge for up to 3 days and can be frozen for up to 3 months.
