A delightful appetizer featuring whipped ricotta on toasted bread topped with fresh tomatoes and herbs.

  • 1 cup ricotta cheese
  • 2 to 3 tablespoons olive oil (plus extra for drizzling)
  • 1 clove garlic (minced, optional)
  • Salt and freshly ground black pepper (to taste)
  • 1 to 2 cups fresh tomatoes (diced)
  • 1 to 2 tablespoons fresh basil or parsley (chopped)
  • 1 baguette or crusty bread (sliced and toasted)
  • Balsamic glaze for drizzling (optional)

Instructions

  1. Whip the ricotta: Combine the ricotta, 1 to 2 tablespoons of olive oil, the minced garlic (if using), salt, and pepper in a bowl. Use a whisk or electric mixer to whip until the mixture is smooth and fluffy.
  2. Prepare the tomato mixture: In a separate bowl, toss the diced tomatoes with a drizzle of olive oil, salt, pepper, and your choice of chopped basil or parsley.
  3. Toast the bread: Preheat your oven or toaster oven to a medium setting. Toast the bread slices until golden and crisp, about 5-7 minutes.
  4. Assemble the bruschetta: Spread a generous amount of the whipped ricotta over each toasted slice of bread.
  5. Top with freshness: Spoon the fresh tomato mixture generously over the ricotta.
  6. Drizzle and serve: Just before serving, drizzle with extra olive oil and balsamic glaze if desired.

Notes

Use ripe, in-season tomatoes for best flavor. Customize with other herbs for added flavor.
