A fun and refreshing dessert featuring juicy watermelon topped with a creamy ricotta and Greek yogurt blend, assorted fresh fruits, and a hint of mint.

Ingredients

  • 1 large watermelon
  • 1 cup ricotta cheese
  • 1 cup Greek yogurt
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • Fresh fruit (strawberries, blueberries, kiwi, etc.) for topping
  • Fresh mint leaves for garnish

Instructions

  1. Cut the watermelon into round slices about 1 inch thick, and remove the rind.
  2. Mix the ricotta, Greek yogurt, honey, and vanilla extract in a bowl until smooth.
  3. Spread the mixture evenly over each watermelon slice to create the ‘pizza’ base.
  4. Top with assorted fresh fruit and mint leaves.
  5. Slice and serve immediately.

Notes

Best served fresh, but can be stored in an airtight container in the refrigerator for up to 2 days.
