  • 1 cup cottage cheese (low-fat or regular)
  • 1/2 cup cocoa powder
  • 1/4 cup almond flour (or oat flour for a nut-free option)
  • 1/2 cup sweetener of choice (honey, maple syrup, or stevia)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare an 8×8-inch baking pan.
  2. Blend the cottage cheese and sweetener until smooth in a blender or food processor.
  3. Combine the cocoa powder, almond flour, baking powder, and salt in a bowl.
  4. Mix the blended cottage cheese mixture with dry ingredients, eggs, and vanilla extract.
  5. Transfer the brownie batter into the prepared pan and bake for 20-25 minutes.
  6. Cooling the brownies in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  7. Cut into squares and serve fresh.

Notes
