  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cups spinach, chopped
  • Salt and pepper to taste
  • Optional: pasta (such as tortellini or rotini)

Instructions

  1. Brown the sausage in a large pot over medium heat until browned. Remove and set aside.
  2. Sauté the diced onion and minced garlic in the same pot until softened and fragrant, about 3-5 minutes.
  3. Add the chicken broth and bring to a simmer.
  4. Create creamy bliss by stirring in the heavy cream and Parmesan cheese until melted.
  5. Combine with the cooked sausage and chopped spinach, cooking until the spinach wilts.
  6. Pasta perfection: If desired, add cooked pasta to the soup and stir gently.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with additional Parmesan if desired.
