A hearty Vegetable Lasagna layered with vibrant vegetables and rich cheeses, perfect for a comforting meal.

Ingredients

  • Lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 2 cups marinara sauce
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup spinach
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Olive oil
  • Salt, pepper
  • Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté onions, garlic, zucchini, bell pepper, and spinach in olive oil until softened; season with salt, pepper, and Italian seasoning.
  3. Spread a layer of marinara sauce at the bottom of a baking dish followed by a layer of lasagna noodles.
  4. Spread half of the ricotta cheese over the noodles, followed by half of the sautéed vegetables, half of the mozzarella, and a sprinkle of parmesan.
  5. Repeat the layering process: add marinara sauce, noodles, ricotta, vegetables, mozzarella, and parmesan.
  6. Top with a final layer of noodles, remaining marinara sauce, mozzarella, and parmesan.
  7. Cover with foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden brown.
  9. Let cool for a few minutes before slicing and serving.

Notes

For a creamier texture, consider incorporating a layer of béchamel sauce. You can also add lentils or mushrooms for a heartier dish.
