Ingredients
Scale
1 cup all-purpose flour
1/4 cup powdered sugar
1/2 cup unsalted butter, softened
2 cups milk
4 large egg yolks
1/2 cup granulated sugar
1/4 cup cornstarch
1 teaspoon vanilla extract
1/4 teaspoon salt
Whipped cream for serving (optional)
Instructions
Preheat the oven to 350°F (175°C). In a bowl, mix together the flour and powdered sugar. Cut in the softened butter until you have a crumbly mixture. Press this mixture into the bottom of an 8×8-inch baking dish, creating a snug layer. Bake for 15-20 minutes, or until it’s beautifully golden.
Heat the milk over medium heat until it is warm but not boiling.
Whisk together the egg yolks, granulated sugar, cornstarch, and salt. Slowly add the warm milk to this egg mixture while whisking continuously, ensuring that you don’t cook the eggs. Return this mixture to the saucepan.
Cook the mixture over medium heat, stirring constantly, until it thickens and becomes bubbly. Remove from heat and stir in the vanilla extract.
Pour the creamy custard over the baked pastry layer and smooth the top. Cover and chill in the refrigerator for at least 4 hours.
Cut into squares and serve with a generous dollop of whipped cream, if desired.
Notes
Pairs well with fresh berries or chocolate sauce. Can be made a day ahead.
