A comforting Tuscan White Bean Soup, packed with hearty beans, vibrant kale, and aromatic herbs, perfect for chilly evenings.

Ingredients

  • 2 cans of white beans
  • 1 onion, diced
  • 2 carrots, diced
  • 2 stalks of celery, diced
  • 4 cloves of garlic, minced
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • 4 cups of vegetable broth
  • 2 cups of kale, chopped
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the diced onion, carrots, and celery. Sauté until softened.
  2. Stir in minced garlic, thyme, and rosemary. Cook for 2 minutes.
  3. Add white beans and vegetable broth. Mix everything together and bring to a simmer.
  4. Let it cook for 15-20 minutes.
  5. Use a potato masher to mash some beans for a creamier texture.
  6. Stir in chopped kale and cook for another 5 minutes.
  7. Season with salt and pepper before serving.
