A comforting dish of creamy butter beans paired with fresh spinach and sun-dried tomatoes, perfect for a quick meal.

Ingredients

  • 1 can (15 oz) white beans (cannellini or great northern)
  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/2 teaspoon Italian seasoning

Instructions

  1. Melt the butter in a large skillet over medium heat.
  2. Add the minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in the sun-dried tomatoes and cook for another 2 minutes.
  4. Add the white beans and Italian seasoning, stirring gently to combine.
  5. Cook for about 5 minutes, allowing the beans to heat through.
  6. Add the fresh spinach and cook until wilted, about 2-3 minutes.
  7. Season with salt and pepper to taste.
  8. Serve warm as a side or main dish.

Notes

Feel free to add red pepper flakes for extra spice or swap spinach for kale for variations.
