A modern twist on a classic recipe, these Turkey Zucchini Boats are delicious, nutritious, and perfect for a weeknight dinner.

  • 4 medium zucchinis
  • 1 lb ground turkey
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for brushing
  • Fresh basil for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the zucchinis in half lengthwise and scoop out the insides.
  3. Heat a drizzle of olive oil in a skillet over medium heat. Add the ground turkey and cook until browned.
  4. Stir in the marinara sauce, Italian seasoning, salt, and pepper, and cook for an additional 5 minutes.
  5. Fill each zucchini boat generously with the turkey mixture and top with shredded mozzarella.
  6. Place the filled boats on a baking sheet and lightly brush with olive oil. Bake for 20-25 minutes.
  7. Garnish with fresh basil before serving.
