Vibrant bell peppers filled with seasoned ground turkey, rice, and cheese, baked to perfection.

  • 4 large bell peppers
  • 1 pound ground turkey
  • 1 cup cooked rice
  • 1 cup diced tomatoes
  • 1 cup shredded cheese
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and carefully remove the seeds.
  3. Heat a drizzle of olive oil in a skillet over medium heat. Add the chopped onions and minced garlic, sautéing until soft and fragrant, about 3-4 minutes.
  4. Add the ground turkey to the skillet and cook, breaking it apart until browned and cooked through, about 5-7 minutes.
  5. Stir in the cooked rice, diced tomatoes, and cumin. Mix until well combined and heated through.
  6. Spoon the turkey mixture generously into each bell pepper.
  7. Top each stuffed pepper with a handful of shredded cheese.
  8. Arrange the stuffed peppers upright in a baking dish and bake for 30-35 minutes until tender and cheese is bubbly and golden.
  9. Remove from the oven, let cool for a few minutes, and serve.

Notes

Pairs well with a green salad or garlic bread. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for 2 months.
