A light yet fulfilling dish combining creamy avocado with zesty tuna salad, perfect for a summer meal or appetizer.

Ingredients

  • 2 ripe avocados
  • 1 can of tuna (drained)
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Chopped celery
  • Chopped red onion
  • Chopped parsley (optional)

Instructions

  1. Halve the avocados, remove the pit, and scoop out a small amount of flesh.
  2. Combine the drained tuna, mayonnaise, Dijon mustard, lemon juice, celery, red onion, salt, and pepper in a bowl.
  3. Stuff the tuna mixture into the avocado halves.
  4. Garnish with chopped parsley if desired.
  5. Serve immediately and enjoy!

Notes

Best enjoyed fresh, but tuna filling can be stored separately in the fridge for up to two days.
