A quick and easy Tuna Pasta Salad that is perfect for summer gatherings, bursting with flavor and nutrition.

Ingredients

  • 1 can of tuna, drained
  • 2 cups cooked pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1/2 cup corn (optional)
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Combine the cooked pasta, drained tuna, cherry tomatoes, cucumber, red onion, and corn (if using) in a large bowl.
  2. Whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth and creamy.
  3. Pour the dressing over the pasta mixture and toss until well combined.
  4. Taste your salad and adjust the seasoning as needed.
  5. Chill in the refrigerator for at least 30 minutes before serving.
  6. Garnish with fresh parsley and serve cold.
