A deliciously soaked sponge cake, lavishly covered in whipped cream and fresh fruit, perfect for any gathering.

Ingredients

  • 1 cup all-purpose flour
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 5 large eggs, separated
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ cup milk
  • 1 can (12 oz) evaporated milk
  • 1 can (14 oz) sweetened condensed milk
  • 1 cup heavy cream
  • Fresh fruit or whipped cream for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour a 9×13 inch baking dish.
  2. In a bowl, stir together your flour, baking powder, and salt.
  3. Beat the egg yolks and granulated sugar until light and fluffy, then stir in the vanilla extract and milk.
  4. Gradually add the flour mixture to the egg mixture, stirring until just combined.
  5. In another bowl, beat the egg whites until stiff peaks form, then gently fold into the batter.
  6. Pour the batter into the prepared baking dish and bake for 30-35 minutes.
  7. Once baked, allow the cake to cool in the dish.
  8. Combine the evaporated milk, sweetened condensed milk, and heavy cream in a separate bowl.
  9. After the cake has cooled, poke holes on top and slowly pour the milk mixture over it.
  10. Refrigerate the cake for at least 4 hours or overnight before serving, topped with whipped cream and fresh fruit.

Notes

Be gentle when folding in the egg whites to keep the batter airy.
