  • 1 pound shrimp, peeled and deveined
  • 1 pound spicy sausage, sliced
  • 2 cups long-grain rice
  • 1 large onion, diced
  • 1 bell pepper, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 4 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sausage and cook until browned.
  3. Stir in the onion, bell pepper, celery, and garlic; cook until softened.
  4. Add the rice and Cajun seasoning, stirring to coat the grains.
  5. Pour in the diced tomatoes and chicken broth; bring to a boil.
  6. Reduce heat to low, cover, and simmer for about 20 minutes.
  7. Add the shrimp during the last 5 minutes of cooking.
  8. Season with salt and pepper to taste.
  9. Garnish with chopped parsley and serve.
