A comforting and flavorful Tomato Basil Soup perfect for cozy dinners or as an appetizer, featuring the vibrant flavors of tomatoes and fresh basil.

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups canned or fresh tomatoes, chopped
  • 2 cups vegetable broth
  • 1 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • 1 tablespoon sugar (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, and sauté until the onion is translucent.
  2. Add the chopped tomatoes and vegetable broth, and bring to a boil.
  3. Reduce heat and let simmer for about 20 minutes.
  4. Stir in the chopped basil, and use an immersion blender to puree the soup until smooth.
  5. Season with salt, pepper, and sugar if needed.
  6. Serve hot with crusty bread.

Notes
