A delightful Thai-inspired dish with creamy peanut sauce over tender chicken, perfect for weeknight meals.

  • 1 lb boneless, skinless chicken breasts
  • 1 cup peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1/4 cup water
  • Salt and pepper to taste
  • Chopped peanuts and green onions for garnish

Instructions

  1. Slice the chicken breasts into bite-sized pieces.
  2. Cook the chicken over medium heat in a large skillet until golden brown and fully cooked, about 7-10 minutes.
  3. Whisk together the peanut butter, soy sauce, honey, lime juice, garlic, ginger, and water in a bowl until smooth.
  4. Pour the peanut sauce over the cooked chicken in the skillet, then stir to coat evenly.
  5. Cook for an additional 2-3 minutes to warm the sauce through.
  6. Season with salt and pepper to taste.
