A vibrant and flavorful Thai chicken satay, marinated in coconut and peanut flavors, perfect for grilling.

  • 1/4 cup coconut milk
  • 2 tablespoons soy sauce
  • 2 tablespoons peanut butter
  • 2 tablespoons brown sugar
  • 1 tablespoon lime juice
  • 1 teaspoon curry powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Skewers (soaked in water if wooden)

Instructions

  1. Create the Marinade: In a bowl, mix coconut milk, soy sauce, peanut butter, brown sugar, lime juice, curry powder, garlic powder, salt, and pepper to create a marinade.
  2. Marinate the Chicken: Add the chicken strips to the marinade and let sit for at least 30 minutes to allow those flavors to infuse.
  3. Preheat the Grill: Preheat the grill or a grill pan over medium heat, ensuring it’s hot enough to sear the chicken perfectly.
  4. Skewer the Chicken: Thread the marinated chicken onto the skewers, making sure to leave a bit of space between pieces for even cooking.
  5. Grill the Chicken Skewers: Grill the chicken skewers for about 6-8 minutes, turning occasionally, until cooked through and slightly charred.
  6. Serve: Serve with peanut sauce and lime wedges for an extra zing!
