A warm and comforting taco pasta dish that combines the bold flavors of tacos with hearty elbow macaroni.

Ingredients

  • 8 oz elbow macaroni
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can diced tomatoes with green chilies
  • 1 cup cheddar cheese, shredded
  • 1 cup salsa
  • 1 cup corn (optional)
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Cook the elbow macaroni according to package instructions. Drain and set aside.
  2. Brown the ground beef or turkey in a large skillet over medium heat. Drain excess fat.
  3. Add the taco seasoning, diced tomatoes, and salsa to the skillet. Stir to combine and cook for 5 minutes.
  4. Add the cooked macaroni and corn (if using) to the skillet; mix well.
  5. Stir in the shredded cheddar cheese until melted.
  6. Season with salt and pepper to taste.
  7. Garnish with chopped cilantro before serving.
