A delicious fusion of traditional lasagna with bold Tex-Mex flavors, featuring layers of ground beef, beans, and cheesy goodness.

  • 9 lasagna noodles
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cups salsa
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 2 cups shredded cheddar cheese
  • 1 packet taco seasoning
  • 1 cup sour cream
  • 2 green onions, chopped

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Boil the lasagna noodles according to package instructions; drain and set aside.
  3. Sauté the ground beef with the chopped onion until fully cooked. Stir in the taco seasoning, salsa, black beans, and corn.
  4. Start layering by spreading some of the beef mixture in a baking dish, placing noodles on top, followed by sour cream and shredded cheese.
  5. Repeat the layers until all ingredients are used, finishing with cheese on top.
  6. Bake for 25-30 minutes until cheese is bubbly and golden.
  7. Cool for a few minutes and garnish with chopped green onions before serving.
