A comforting and delicious casserole that combines the classic flavors of tacos in a hearty dish perfect for family dinners or gatherings.

Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 2 cups tortilla chips, crushed
  • 2 cups shredded cheddar cheese
  • 2 teaspoons taco seasoning
  • Salt and pepper to taste
  • Sour cream and green onions for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground beef and onion until the beef is browned. Drain excess fat.
  3. Stir in the black beans, corn, diced tomatoes, taco seasoning, salt, and pepper.
  4. In a greased 9×13 inch baking dish, layer half of the crushed tortilla chips, followed by half of the beef mixture, and half of the cheese.
  5. Repeat the layers again.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  7. Serve hot with sour cream and green onions if desired.

Notes

For extra nutrition, feel free to add other vegetables like bell peppers or zucchini. Use lean ground beef to reduce grease.
