A vibrant and nourishing bowl filled with roasted sweet potatoes, seasoned ground beef, creamy avocado, and cottage cheese, all drizzled with honey.

Ingredients

  • 1 medium sweet potato
  • 150g lean ground beef
  • 1 avocado
  • 1 cup cottage cheese
  • 1 tsp olive oil
  • Salt & pepper to taste
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp honey (for drizzling)

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Cube the sweet potato into bite-sized pieces and toss with olive oil, salt, and pepper. Spread them on a baking dish and roast for 20-25 minutes.
  3. Heat a skillet and add the ground beef, seasoning with smoked paprika, garlic powder, salt, and pepper. Cook until browned.
  4. Slice the avocado in half, remove the pit, and cut it into slices.
  5. Assemble the bowl with layers of sweet potatoes, ground beef, avocado, and cottage cheese.
  6. Drizzle honey over the top.
  7. Serve immediately and enjoy!

Notes

For a lighter version, substitute lean ground beef with turkey or chicken. Adding chili flakes can add a spicy kick.
