  • 1 cup Blueberries (washed and drained)
  • 1/2 cup Pepitas (toasted for flavor)

  • 1 large Lemon (juiced)
  • 2 tablespoons Honey (adjust to taste)

Instructions

  1. Prepare the Kale: Wash the kale thoroughly under cool water. Shake off excess moisture. Remove tough stems and rib from each leaf, chop them into bite-sized pieces, and massage in a large bowl for 2-3 minutes until tender.
  2. Prepare the Dressing: In a small bowl, whisk together olive oil, lemon juice, honey, and a pinch of black pepper. Adjust sweetness if needed by adding more honey.
  3. Combine the Ingredients: Add diced peaches, blueberries, and toasted pepitas to the massaged kale. Pour the dressing over the salad, ensuring everything is well coated.
  4. Toss and Serve: Gently toss the salad again to combine all ingredients, making sure each bite is bursting with flavor.
