A delightful homemade version of Subway’s iconic Italian Herb and Cheese Bread, featuring a golden crust and a soft, pillowy interior.

  • 1.5 cups Warm Water (110°F)
  • 1 tablespoon Sugar
  • 2 teaspoons Instant Yeast
  • 4 cups Bread Flour (plus extra for dusting)
  • 2 tablespoons Olive Oil
  • 1.5 teaspoons Salt
  • 2 teaspoons Italian Seasoning
  • 1 teaspoon Dried Oregano
  • 1 cup Shredded Cheese (Cheddar, mozzarella, or blend)
  • Cornmeal (for dusting, optional)

Instructions

  1. Activate the Yeast: In a large mixing bowl, combine the warm water, sugar, and instant yeast. Let it sit for about 5-10 minutes until frothy.
  2. Combine the Dry Ingredients: Mix the bread flour, salt, Italian seasoning, and dried oregano in a separate bowl.
  3. Mix Ingredients Together: Pour the frothy yeast mixture into the bowl with the dry ingredients. Add the olive oil and stir until a shaggy dough forms.
  4. Knead the Dough: Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
  5. First Rise: Form the dough into a ball and place it in a greased bowl. Cover and let it rise in a warm spot until doubled—about 1 hour.
  6. Shape the Bread: Punch down the risen dough and shape it into a loaf. Place it on a baking sheet dusted with cornmeal.
  7. Second Rise: Cover the loaf and allow it to rise again for about 30 minutes, or until noticeably puffed.
  8. Preheat the Oven: As the dough rises, preheat the oven to 375°F (190°C).
  9. Add Cheese Topping: Sprinkle shredded cheese on top of the risen loaf and press down lightly.
  10. Bake to Golden Perfection: Bake for 25-30 minutes or until golden brown and sounds hollow when tapped.
  11. Cool and Enjoy: Let cool on a wire rack before slicing.
