Deliciously sweet plantains stuffed with a savory beef filling, perfect for family gatherings.

Ingredients

  • 4 yellow plantains
  • 2 tbsp avocado oil
  • 1 lb ground beef
  • ½ medium onion (finely diced)
  • 2 garlic cloves (finely minced or grated)
  • ½ green bell pepper (diced)
  • ½ red bell pepper (diced)
  • 1 tsp kosher salt (more for taste)
  • ½ tsp ground black pepper
  • 1 tbsp adobo seasoning
  • ¼ cup tomato sauce
  • ¼ cup beef broth
  • ¼ – ½ tsp cayenne pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.
  2. Prepare the plantains by cutting the ends off and scoring the skin lengthwise, then carefully peel off the skin.
  3. Coat each peeled plantain with avocado oil, ensuring they are well covered, and place them on the baking sheet to roast for 30 minutes, flipping halfway through.
  4. Sauté the diced onion, minced garlic, and bell peppers in a skillet over medium heat until soft and fragrant, about 5-7 minutes.
  5. Brown the ground beef in the skillet, breaking it up with a spatula, until thoroughly cooked, about 6-8 minutes.
  6. Add the tomato sauce, beef broth, kosher salt, black pepper, adobo seasoning, and cayenne pepper, allowing the mixture to simmer for a few minutes.
  7. Remove the roasted plantains from the oven and make a lengthwise slice down each plantain, being careful not to cut all the way through.
  8. Fill each plantain with the savory beef mixture and serve warm.

Notes

These stuffed plantains shine on their own but pair wonderfully with sour cream, fresh cilantro, or a side of black beans and rice.
