Stuffed Meatloaf Loaded with Mozzarella Cheese

A twist on the classic meatloaf featuring a gooey mozzarella center that brings a comforting, nostalgic flavor to the dinner table.

Ingredients

  • 2 lbs ground beef
  • 1/2 lb ground pork
  • 1 medium onion, diced small
  • 3 cloves garlic, minced
  • 2 eggs
  • 3/4 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup fresh parsley, chopped
  • 1 tbsp Worcestershire sauce
  • 2 tsp Italian seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp red pepper flakes (optional)
  • 10 oz mozzarella, cut into thick sticks
  • Optional: 2 tbsp pesto or sun-dried tomatoes
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp balsamic vinegar
  • 1 tsp garlic powder

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the diced onion in olive oil until soft and translucent. Add garlic and cook for 1 more minute.
  3. Combine ground beef and pork with sautéed onions and garlic, eggs, breadcrumbs, milk, Parmesan cheese, parsley, Worcestershire sauce, Italian seasoning, salt, black pepper, and red pepper flakes.
  4. Transfer the meat mixture onto parchment paper and shape it into a rectangle.
  5. Place mozzarella sticks along the center of the meat rectangle.
  6. Roll the meat over the cheese, sealing the edges.
  7. Mix ketchup, brown sugar, balsamic vinegar, and garlic powder for the glaze.
  8. Brush the glaze over the meatloaf and bake for 1 hour.
  9. Remove from the oven and let it rest for 10 minutes before slicing.
  10. Serve warm and enjoy.

Notes

Pairs excellently with creamy mashed potatoes or garlic bread. Store leftovers in an airtight container for up to 3 days.
