A nostalgic dessert featuring layers of buttery cake, sweet strawberries, and fluffy whipped cream, creating a perfect summer treat.

Ingredients

  • 2 cups sliced strawberries
  • 1/4 cup sugar
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • Whipped cream for serving

Instructions

  1. Macerate the strawberries by combining them with sugar in a bowl and set aside.
  2. Preheat your oven to 425°F (220°C).
  3. Mix together flour, baking powder, and salt in another bowl.
  4. Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
  5. Stir in heavy cream and vanilla extract until just combined.
  6. Turn the dough onto a lightly floured surface and knead gently before rolling out to 1-inch thickness.
  7. Bake the shortcakes for 12-15 minutes or until golden.
  8. Layer the cooled shortcakes with macerated strawberries and whipped cream, then top with the other half of the shortcake.

Notes

Ensure butter is very cold for flaky layers and avoid overkneading to keep the dough tender.
