A classic British dessert featuring a rich, moist pudding made with dates and topped with a luscious toffee sauce.

  • 250ml water
  • 1 tsp baking soda
  • 75g unsalted butter
  • 150g brown sugar
  • 2 large eggs
  • 150g all-purpose flour
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 200g brown sugar (for toffee sauce)
  • 250ml heavy cream (for toffee sauce)
  • 75g unsalted butter (for toffee sauce)

Instructions

  1. Preheat your oven to 180°C (350°F) and grab a baking dish to grease.
  2. Place the chopped dates in a pot with water and baking soda. Bring this delightful mix to a simmer for about 10 minutes.
  3. Cream together the unsalted butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time to your buttery mixture, ensuring each is fully incorporated before adding the next.
  5. Sift in your all-purpose flour, vanilla extract, and baking powder. Stir gently until well combined.
  6. Carefully stir in the warm date mixture, allowing the flavors to meld together.
  7. Pour the batter into your prepared baking dish and bake for 30-35 minutes.
  8. Combine the brown sugar, heavy cream, and unsalted butter in a saucepan over medium heat for the toffee sauce until melted and smooth.
  9. Serve warm, drizzling the toffee sauce generously over each slice.

Notes

For enhanced flavor, add a pinch of sea salt to the toffee sauce. Serve with whipped cream or vanilla ice cream.
