A delightful and comforting dish featuring tender chicken, slurpy noodles, and a sticky garlic sauce, perfect for a quick weeknight dinner.

Ingredients

  • 10 to 14 oz egg noodles (ramen or preferred noodles)
  • 2 to 3 tablespoons vegetable or sesame oil
  • 1 lb chicken breast or thighs (thinly sliced)
  • Salt and freshly ground black pepper (to taste)
  • 4 to 5 garlic cloves (minced)
  • ½ cup soy sauce
  • 2 to 3 tablespoons honey or brown sugar
  • 1 to 2 tablespoons rice vinegar or lime juice
  • 1 to 2 teaspoons grated fresh ginger (optional)
  • 1 to 2 teaspoons chili paste or sriracha (optional)
  • Optional garnish: sliced green onions and sesame seeds

Instructions

  1. Cook the Noodles: Cook noodles according to package instructions; drain and set aside.
  2. Heat the Oil: Heat oil in a large skillet or wok over medium-high heat. Season chicken with salt and pepper.
  3. Brown the Chicken: Add chicken to skillet and cook until browned and cooked through. Remove chicken and set aside.
  4. Sauté the Garlic: Add more oil if needed, then sauté garlic and ginger (if using) until fragrant, about 30 seconds.
  5. Create the Sauce: Stir in soy sauce, honey or brown sugar, rice vinegar or lime juice, and chili paste or sriracha if desired. Simmer for 1 to 2 minutes until sauce thickens.
  6. Combine Chicken and Noodles: Return chicken to skillet and add noodles; toss to coat everything evenly with the garlic sauce.
  7. Garnish and Serve: Garnish with sliced green onions and sesame seeds if desired. Serve warm.

Notes

For a vegetarian option, substitute chicken with tofu or tempeh and ensure noodles are egg-free. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
