Spinach Stuffed Chicken Breast

A simple yet impressive dish featuring juicy chicken breasts filled with a creamy spinach and cheese mixture.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine chopped spinach, cream cheese, Parmesan, minced garlic, salt, and pepper until well mixed.
  3. Cut pockets in each chicken breast without going all the way through.
  4. Stuff each chicken breast pocket with the spinach mixture, packing it in well.
  5. Sear the chicken in olive oil over medium-high heat for 4-5 minutes per side.
  6. Transfer the chicken to a baking dish and bake for 20-25 minutes until the chicken reaches 165°F (75°C).
  7. Let the chicken rest for a few minutes before slicing to serve.

Notes

Pairs well with a side salad, garlic mashed potatoes, or steamed asparagus. Leftovers can be stored in the fridge for up to 3 days.
