A delectable spinach stuffed chicken breast filled with a creamy ricotta and mozzarella mixture, perfect for any occasion.

Ingredients

  • 4 chicken breasts
  • 1 cup fresh spinach, chopped
  • 1 cup ricotta cheese
  • 1/2 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix together the chopped spinach, ricotta cheese, mozzarella cheese, minced garlic, grated Parmesan, and salt and pepper.
  3. Cut a pocket in each chicken breast and stuff it with the spinach mixture.
  4. Sear the chicken in olive oil for 3-4 minutes on each side until golden brown.
  5. Transfer the seared chicken to a baking dish and bake for 25-30 minutes or until cooked through.
  6. Let the chicken rest for 5 minutes before serving.

Notes

Taste the filling before stuffing the chicken to adjust the seasoning. Use pre-washed spinach and shredded cheese for quicker prep.
