Spinach Mushroom Orzo with Chicken

A delightful dish combining tender chicken, earthy mushrooms, and fresh spinach over perfectly cooked orzo.

Ingredients

  • 1 lb boneless skinless chicken breasts or thighs, cut into bite-size pieces
  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 to 3 cloves garlic, minced
  • 1 cup sliced mushrooms
  • 3 to 4 cups fresh spinach
  • Salt and freshly ground black pepper, to taste
  • A pinch of red pepper flakes (optional)
  • 2 1/2 cups chicken broth
  • 1 teaspoon dried oregano or Italian seasoning
  • 1/4 cup grated Parmesan cheese, plus extra for serving
  • Fresh lemon juice or zest (optional)

Instructions

  1. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Season the chicken pieces with salt and pepper, then add them to the skillet, cooking until browned and cooked through, about 6 to 8 minutes. Remove the chicken and set aside.
  2. Add the remaining tablespoon of olive oil to the skillet. Sauté the chopped onion for 2 to 3 minutes until softened.
  3. Add the minced garlic and sliced mushrooms to the skillet, cooking for 4 to 5 minutes until the mushrooms release their moisture and start to brown.
  4. Stir in the orzo, coating it with the vegetables and oil.
  5. Pour in the chicken broth and sprinkle in the oregano or Italian seasoning. Bring to a gentle simmer, then reduce the heat, cover, and cook for 10 to 12 minutes until the orzo is tender.
  6. Stir in the cooked chicken and add the fresh spinach. Keep stirring until the spinach wilts down.
  7. Mix in the grated Parmesan cheese and adjust the seasoning as needed.
  8. Serve warm, garnished with extra Parmesan and a splash of fresh lemon juice or zest.
