A comforting Spinach and Feta Frittata that’s easy to make and perfect for any meal of the day.

Ingredients

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup milk
  • 1 small onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté the onion in olive oil until translucent, about 3-4 minutes.
  3. Cook the chopped spinach until wilted, approximately 2-3 minutes.
  4. Whisk the eggs, milk, salt, and pepper until well combined.
  5. Combine the sautéed spinach and onion, and fold in the crumbled feta cheese gently.
  6. Cook the mixture in the skillet for a few minutes until the edges start to set.
  7. Transfer the skillet to the oven and bake for 20-25 minutes.
  8. Cool slightly before slicing and serving.

Notes

For a fluffier frittata, whisk the eggs thoroughly. For minimal cleanup, use an oven-safe skillet.
