A comforting one-pan dish combining tender chicken and protein-packed chickpeas with aromatic spices.

  • 1 lb chicken breast, diced
  • 1 can chickpeas, rinsed and drained
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Sauté the aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic to the pan, and sauté until they’re softened and beautifully aromatic—about 3-4 minutes.
  2. Brown the chicken: Next, toss in the diced chicken breast. Cook it until it’s browned and no longer pink in the center, which should take around 5-7 minutes.
  3. Spice it up: Stir in the rinsed chickpeas, cumin, paprika, cayenne pepper, salt, and pepper into the pan. Mix everything together and let it cook for an additional 5-7 minutes until it’s heated through.
  4. Add freshness: Garnish your creation with fresh cilantro before serving.
  5. Enjoy your creation: Serve warm with a side of fluffy rice or warm flatbread.

Notes

Leftovers store well in an airtight container in the fridge for 3-4 days. Can also be frozen for up to three months.
