A delightful loaf combining zucchini, carrots, and warm spices for a moist and flavorful treat.

  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup grated zucchini (moisture gently squeezed out)
  • 1 cup grated carrot
  • 3/4 cup granulated sugar
  • 1/4 cup packed light brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup raisins

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×5-inch loaf pan by greasing and lining with parchment paper.
  3. Whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and salt in a large bowl.
  4. Mix the wet ingredients in a separate bowl: sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  5. Fold in the grated zucchini and carrot gently.
  6. Combine the dry and wet mixtures just until combined; avoid overmixing.
  7. Add walnuts or pecans and raisins, folding gently to incorporate.
  8. Transfer the batter into the prepared loaf pan, spreading evenly.
  9. Bake for 50 to 60 minutes, until a toothpick comes out clean.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For additional texture, consider adding different nuts or spices like cardamom. Store leftovers in an airtight container for up to 3 days at room temperature or freeze for up to 3 months.
