A vibrant and flavorful Spanish rice that complements any meal, perfect for family gatherings.

Ingredients

  • 2 cups long-grain rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 1/2 cups chicken or vegetable broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add onions and garlic; sauté until softened, about 3-5 minutes.
  3. Stir in the rice, cooking until slightly toasted.
  4. Add diced tomatoes, broth, chili powder, cumin, and salt; stir everything together.
  5. Bring to a boil, then reduce heat to low and let simmer.
  6. Cover and simmer for about 20 minutes, until the rice is tender.
  7. Fluff with a fork and garnish with cilantro before serving.

Notes

For a vegan option, use vegetable broth instead of chicken broth. Leftovers can be stored for up to 4 days in the fridge.
