A warm and comforting Spanish Garlic Soup, perfect for chilly nights, rich in flavor with garlic and smoked paprika.

Ingredients

  • 3 tablespoons olive oil
  • 10 cloves garlic, thinly sliced
  • 2 cups stale bread
  • 1 teaspoon smoked paprika
  • 4 cups chicken stock or vegetable broth
  • to taste salt
  • to taste black pepper
  • 3 eggs, whisked

Instructions

  1. Sauté the garlic in olive oil over medium heat until fragrant and golden, about 2-3 minutes.
  2. Add the stale bread and smoked paprika, stirring to coat the bread in garlic oil.
  3. Pour in the chicken stock (or vegetable broth) and bring to a gentle simmer for 10-15 minutes.
  4. Season with salt and black pepper to taste.
  5. Whisk the eggs in a separate bowl and drizzle into the soup while stirring gently.
  6. Serve the soup warm, garnished with herbs or olive oil if desired.

Notes

Use homemade broth for the best flavor and adjust salt based on broth’s saltiness. Can be made vegan by omitting eggs.
